TO MAKE THE BROTH:
1. Add pieces of bone in lamb meat (such as lamb shanks) to a heavy soup pot.
2. Add in an onion, bay leaf, and cardamom, add enough water to completely submerge the meat.
3. Cook until the meat is tender about 1-1.5 hours.
4. Strain the broth and set aside along with the meat.
